<p>Sorry about that. I just looked at the calendar and realized that school starts next Tuesday for FWISD, and I panicked for a minute. Deep breath. Okay. I’m better.</p>
<p>I don’t know about your kidlets, but my younger kiddo is NOT a morning person. She doesn’t want to be awake, much less eating anything before noon. Alas, FWISD doesn’t care and insists on school starting at unholy hours. (You’re right. I’m not a morning person, either.)</p>
<p>After a lot of negotiations, we have come to an agreement. She will eat a light, healthy breakfast, and I won’t have to yell every morning. I’ve come up with some recipes and ideas that have my non-eater’s seal of approval. I hope your family likes them, too!</p>

<p><strong>Shirred Eggs for One</strong></p>
<p>Shirred eggs, also known as baked eggs, are an easy breakfast, especially if you have a toaster oven.</p>
<p><em>Ingredients</em></p>
<p>Olive oil for greasing ramekin<br />
1 to 2 eggs per person<br />
1 tablespoon heavy cream<br />
Shaved or grated cheese (we like Gruyere in our house, but you can use any hard grating cheese)<br />
Pinch of kosher salt and grind of pepper<br />
If you want to be fancy, you can add some chopped herbs after baking</p>
<p><em>Directions</em></p>
<p>Preheat the toaster oven to 375°. Grease a ramekin with a couple of drops of olive oil.</p>
<p>Crack the eggs into the ramekin. Carefully pour the heavy cream around the edges of the ramekin, making sure not the break the yolks. Season with the salt and pepper and top with the shaved or grated cheese.</p>
<p>Put the ramekin in the toaster oven and bake until the egg whites are set for about 10 to 12 minutes. Remove the ramekin from the oven and let rest for about 5 minutes.</p>
<p>Serve with toast.</p>

<p><strong>Fresh Fruit Bruschetta</strong></p>
<p>Calling this “bruschetta” makes it seem fancy, which appeals to my picky eater!</p>
<p><em>Ingredients</em></p>
<p>Two slices good, rustic bread per person (My husband has recently figured out sourdough, so we always have it on hand, but you can use any hearty, crusty bread.)<br />
1 tablespoon Nutella, nut butter, cream cheese, or whipped ricotta per slice of bread<br />
Fresh fruit (We like either raspberries or sliced strawberries, but you can use whatever your family likes – berries, apples, pears, kiwi, bananas, pineapple…)<br />
Nuts or seeds, optional<br />
Honey to drizzle</p>
<p><em>Directions</em></p>
<p>Toast the bread to desired brownness. My kiddo likes hers fairly pale, while I’m more inclined to incinerate my toast.</p>
<p>Spread each slice of toast with a tablespoon of Nutella or nut butter. My kiddo is the Nutella fan, while I go for peanut, almond, or cashew butter or, if I&#8217;m feeling fancy, whipped ricotta. Top with the fruit and nuts or seeds of choice and drizzle with honey. Enjoy!</p>

<p><strong>Tortilla Breakfast Pizza</strong></p>
<p>We don’t always have pizza dough on hand, but we ALWAYS have flour tortillas. These are easy and completely customizable.</p>
<p><em>Ingredients</em></p>
<p>1 flour tortilla per person (we use fajita sized tortillas)</p>
<p><u>Possible toppings:</u></p>
<p>Sliced deli meat<br />
Shredded cheese<br />
Sliced vegetables<br />
Pesto<br />
Tomato sauce<br />
Eggs<br />
Leftover meats<br />
Cream cheese or whipped ricotta<br />
Fresh fruit<br />
Cinnamon Sugar<br />
Nut butters</p>
<p><em>Directions</em></p>
<p>Okay, I know that this is going to be hard to follow, but I know you’re up for it!</p>
<p>Place the tortilla on a baking sheet covered in foil or parchment paper. Spread whatever you like on the tortilla. Heap it up! Place the baking sheet in a preheated 375° oven and wait until the cheese melts or the toppings warm through. Eat. My favorite is pesto, leftover vegetables, a little cheese, and an egg cracked over the top. My kiddo likes cream cheese, fruit, and cinnamon sugar, which caramelizes a little in the oven.</p>
