Nut? Fruit? Spicy? Sweet? The possibilities are almost limitless, and every kind has their devoted followers. Fortunately, there’s Chicken Salad Chick with 13 kinds of chicken salad, plus pimento cheese and fresh sides that are made by hand every morning. They also have easy catering options that are perfect for baby showers, office lunches or tailgates.
Started by a single mother of three in Auburn, Alabama, Chicken Salad Chick is quickly becoming the fast casual restaurant for people who want a delicious and fast handmade meal. And Meggie and John Schissler were the first to bring those amazing chicken salads to Texas.
I talked with Meggie not long after they opened their most recent of seven area locations up in Southlake. Meggie grew up in Dallas and worked in the Chicken Salad Chick home office in Auburn before making her way back home to Texas.
“I joined the marketing team for Chicken Salad Chick when it was still very young,” Meggie said. “I got to go around to the openings and experience the excitement in the brand. I loved how people appreciate the simplicity of chicken salad.”
While Meggie was working in Auburn, she met Auburn alumnus John whom she married. “But I’m a Texas girl and wanted to come back,” said Meggie. “I kept at the owners [of Chicken Salad Chick] until they were ready to open in Texas, then I brought John back to the homeland.”
Meggie admits that “neither one of us had one second of restaurant experience” before they opened their first Chicken Salad Chick in Fort Worth, but I think we can agree that what they do works. Yes, Chicken Salad Chick is a fast casual concept in that you order at the counter, but there is carpet on the floor, tablecloths on the tables, and the food is made daily in house. It’s comfortable, and needless to say, the food is delicious!
“We want you to feel like you’re in our home,” Meggie smiled.
And Fort Worthians have fallen in love with Chicken Salad Chick. Whether it’s the convenience of the Quick Chick (large and small containers of delicious chicken salad ready to take home), the comfortable restaurant, the fact that chicken salad is full of protein and filling but still light (making it the perfect lunch!), or the choices of flavor, we love our Chicken Salad Chick!
My older kiddo especially likes the Buffalo Barclay, while my younger prefers the Sassy Scotty. My husband is old school and likes the Classic Carol, while I try something different each time. See why I love the Quick Chicks? We can’t agree on anything!
When I asked Meggie why she thought Fort Worth has embraced Chicken Salad Chick like it has, she said, “It seems to be a perfect fit because each community seems to take pride in their location. We love being a part of a company that cares for their team, so that they can in turn serve their guests and community well, too.”
